USES
Sodium Citrate is a salt that comes from citric acid which, in turn, comes from natural fruits and vegetables, especially citrus fruits. In many old cookbooks Sodium Citrate is also called sour salt because of its salty, and mildly tart taste. It carries a couple of other common sour salts, such as citric acid, and potassium citrate. T Sources says that people use Sodium Citrate in recipes that make jams, gelatins, beverages, and dairy products, such as ice cream, yogurt, cheese, and milk.  Sodium Citrate has many beneficial properties.

Sodium Citrate is an excellent Flavour Enhancer because it will drive any flavour that it is added to. With only a very small amount of Sodium Citrate you can add sourness and saltiness to your recipe, if you add a bit of sugar, for sweetness, that is three out of four of the main tastes that will make any flavour really pop. Sodium Citrate is commonly used in many recipes as a acidity regulator. Sodium Citrate, which is a weak acid, can be added to water to make a buffering solution. Sodium Citrate can be added to your recipe in order to stabilize it, and hold the pH steady. Because of its antioxidant, and acidity regulator properties Sodium Citrate is also classified as a sequesterant. A sequesterant is a kind of preservative, whose role as a food additive is to improve the quality and stability of food products.

In food Sodium Citrate is an antioxidant. It is widely recognized that Antioxidants are good for you because they will help your body neutralize oxidant toxins and free radicals that can harm you. Free radicals are caused by many things such as fried foods, cigarette smoke, ozone, car exhaust, smog, drugs, radiation, even the sun. When you are exposed to too much oxidation, for too long, it can take a toll on your body. Too much oxidation can lead to a higher likelihood of cancer, damage to arteries, hardening of the arteries, increased likelihood of a heart attack, premature aging, increased risk of illness, memory, brain health, and even a shortening of your life potential life span. Sodium Citrate can improve the effects of other antioxidants such as those found in fresh fish, vegetables, and fruit.
